Step 1
1. Preheat the oven to 400 degrees. Move oven rack to the center of your oven. Wash, peel, and cube sweet potatoes into bite size pieces or fries with a sharp knife. Spread out in a single layer onto a baking sheet lined with parchment paper. Spray the tops with cooking spray and sprinkle with sea salt and other seasonings of choice. Bake for 20 minutes, flip, and bake an additional 15 minutes. Potatoes should be fork tender.

2. Slice the chicken into 12 thin strips (pound flat if needed). Cut cheese slices in half and place one on each chicken strip. Wrap chicken and cheese around three asparagus spears and place seam down in a skillet over medium heat. Sprinkle with seasoning. Cover and cook for five minutes per side or until chicken is cooked through.

3. Enjoy three chicken wraps warm topped with 1 tablespoon Dijon mustard and 1/4 of the roasted sweet potatoes on the side per serving.
