Sweet potato and Butterbean Curry

Instructions

Step 1
Heat the oil in a large pot and add the onion and a pinch of salt. Cook for 5 minutes until golden. Add the garlic, red chilli, cumin and stir for a minute until fragrant. Add the sweet potato, butter beans and tomatoes and simmer for 30 minutes until cooked through. Season generously
Step 2
While this is bubbling away, rinse your rice and cook it as per pack instructions. Serve with fresh coriander, sesame seeds, lemon juice and a smile. This curry gets better with age - the flavours really come out when you heat it up for lunch tomorrow
