Instructions
Step 1
Brush corn with vegetable oil and roast in a cast iron skillet over medium high heat until lightly charred. Set aside to cool.
Step 2
Finely dice red onion, and jalapeño and add to a mixing bowl. Finely chop cilantro (about ½ cup) and add to mixing bowl. Add paprika, salt, lime zest, and lime juice and stir until well combined.
Step 3
Once corn has cooked, cut the corn from the cob and add to the mixing bowl.
Step 4
Add additional cilantro and lime juice to taste.
Step 5
For a spicier salsa add the whole jalapeño, and some of the seeds
