Tomato pesto pasta! You can't go wrong here with this dish full of flavorful tomato pesto, fresh tomatoes and not to mention mozzarella pearls! YUM! Give it a try for your next summer lunch or dinner!

1 boxveggie rotini

2 Tbspbutter

2 Tbspolive oil

0.5red onion
diced

4mini sweet peppers
sliced

¼ cupparsley
chopped

½ cupsundried tomatoes

2 clovesgarlic
chopped

1 tspsalt

1 tsppepper

½ tspred chili flakes

1 tspitalian seasoning

½ tsponion powder

½ tspgarlic powder

1 jarsundried tomato pesto

½ cupheavy cream

1 packageMozzarella pearls

1 cupcherry tomatoes
sliced

½ cupparmesan cheese

Step 1
In a pot of boiling water add your pasta and some salt. Stir and boil for about 10 min or until pasta is cooked.
Step 2
In a large dutch oven or pot on medium/low heat, add olive oil and butter. Once butter is melted add the onion and mini sweet peppers and cook for 3 min stirring occasionally.
Step 3
Next, add parsley, sundried tomatoes, garlic, salt, pepper, red chili flakes, Italian seasoning, onion powder, garlic powder and cook for 3-4 min stirring occasionally.
Step 4
Add 1 jar of the sundried tomato pesto sauce , heavy cream and mix to combine everything. Bring to simmer while you drain your pasta then add pasta into the sauce and mix well.
Step 5
Finally top with fresh mozzarella pearls, fresh cherry tomatoes, chopped parsley and Parmesan cheese. Toss lightly and serve !
