Tomato pesto egg sandwich

This is the perfect recipe if your craving one of those fancy panini pressed sandwiches from a bakery but don't want to leave the house! I pulled the waffle maker out and some tortillas from the pantry and got creative! This is definitely a customizable dish and you'll be so glad your tried it !

2flour tortillas

1 Tbsptomato pesto
¼ cupsheddred mozzarella cheese

2mini sweet peppers

3cherry tomatoes
1 tspsundired tomatoes

fresh spinach
¼ cupcaramalized onion

2eggs

½ tspsalt

½ tsppepper

¼ tspred chili flakes

fresh parsley
Instructions

Step 1
Add 1/2 sliced onion into a pan on medium/low heat. Let onion cook down until translucent. Add a tsp of brown sugar stir together and let sugar melt down and start to caramelize the onion then take off heat so it doesn't burn.

For the eggs I heated a small non-stick pan and added 1 tbsp butter. once the butter was melted I added 2 freshly cracked eggs and put a lid on top. Let them cook for about 2-3 min then remove from pan .

Heat and spray a waffle iron then lay down 1 tortilla. Start layering tomato pesto, mozzarella, mini sweet peppers, cherry tomatoes, sundried tomatoes, spinach, caramelized onion, 2 eggs, fresh parsley, season and top with more cheese then another tortilla.
Step 4
Close the waffle maker and let cook about 5 to 8 min or until golden brown and slightly crispy.
Step 5
Remove from waffle maker and place on a cutting board. Cut into 4 equal pieces and serve !
