Healthy breakfast tacos

I honestly could eat these for breakfast every day they are so delicious and super quick too. The corn tortilla really makes it so highly recommend you seek them out, otherwise, a mini wheat tortilla will work fine. So simple, will leave you feeling full, satisfied and balanced. Warning HIGHLY addictive.

Instructions

Step 1
1. Smash the avocado with diced spring onion, juice of 1/2 lemon, 1/4 finely diced red chill and chopped basil, season with salt and pepper.
Step 2
2. Whisk the egg with salt and pepper. Softly scramble over low heat pushing the eggs to form ribbons.
Step 3
3. Toast the tortillas, spread over the avocado crush, top with the scrambled egg and crumble over a little feta.
Step 4
4. Feel free to add an extra sprinkle of chilli flakes for a kick of heat.
