Instructions
Step 1
Heat some olive oil in a frying pan
Step 2
Add chopped onion and garlic, cook until translucid but not coloured
Step 3
Add the roasted pepper, spices and seasoning, cook for 3 minutes
Step 4
Add the tomatoes, stir well and cook for 2 minutes
Step 5
Lower the heat, add the eggs, cover and cook for 10 to 15 minutes, depending on how you like your eggs
