Ingredients
2 servings
1 cupall purpose flour
1 ½ Tbspcornstarch
2 Tbspbrown sugar
or sugar of choice
½ Tbspbaking powder
¼ tspsalt
1 cupsoy milk
room temperature, or other plant-based milk
½ Tbsplemon juice
2 Tbspcanola oil
or any neutral oil
½ tspvanilla extract
canola oil

Instructions
Preparing the batter
Step 1
Heat your waffle maker. Sift the dry ingredients, except the sugar. Once sifted, add in the sugar and mix together all the dry ingredients in a bowl. In a separate bowl, mix the plant-based milk and lemon juice together. Leave to sit for 5 minutes to create buttermilk. Add in the rest of the wet ingredients into the buttermilk. Make a well in the center of the dry ingredients then pour in the wet mixture. Mix together until there are no more traces of the dry flour. Do not over-mix to avoid killing the fluffiness from the baking powder. There will be lumps in the batter and that’s okay.
Cooking the waffles
Step 2
Spray or brush your waffle maker with more canola oil. Add in ¼ to ⅓ cup of the batter, enough to fill your waffle maker. Note that the measurement will depend on the size and shape of your waffle maker. Leave to cook until ready (my waffle maker light turns green) and leave on for an additional 2-3 minutes to ensure the golden brown color and crisp.* Take out the waffles and repeat for the rest of the batter. Enjoy with your favourite fruits and some maple syrup!
