EASY SHEET PAN FAJITAS
comes together super quickly, with whatever veggies or protein you have on hand and you can even peel it the night before or in the morning so that all you have to do is throw it on the oven! I used my Maggie 🤍’s taco spice blend bc I always have a batch made (and it’s the best) but you can use whatever taco seasoning you love!
2 bell peppers (any color), cut into thin strips
1 lg (or 2 sm) purple onion, halved + thinly sliced
1-2 jalapeño, thinly sliced (optional but recommended)
1 k (2.2) chicken cutlets (white or dark), cut into small thin pieces
4 generous tbsp Maggie 🤍’s taco blend (recipe on previous reel)
4 tbsp olive oil
3 tbsp lime juice
Grease sheet pan with non stick spray. Add all the veggies. Drizzle 2 tbsp olive oil, and sprinkle 2 tbsp spice blend. Mix well. Move veggies to one side of pan. Add chicken + remaining oil + spice. Mix to combine. At this point you can continue and bake right away or cover and place in the fridge until 40 min before dinner. When ready to bake preheat oven to 375°f (190°c). drizzle lime juice over the pan and bake for 20 min. While baking char flour tortillas over open flame. Keep warm in clean kitchen towel. Make salsa (screen shot recipe in reel). remove pan from oven and mix the veg + chicken together. Return to oven for another 10 min (depending on how big/small you cut everything you may need to adjust time!) remove from oven and serve it up! Add sliced avocado, cilantro or a crisp cabbage slaw, yum! Or, keep it simple bc Wednesday night dinners means no frills. Tortilla, fajita mix + salsa…. Just right!!! Dig in and
