Step 1
Sort and rinse the lentils.

Add 7-8 cups of water to a pot and cover lentils (water will cover lentils by about an inch).

Add bay leaves.

Bring to a simmer.
Step 5
Add onions, carrots, and garlic.

Simmer about 25 minutes or until lentils are mostly cooked.
Step 7
Add the tomato paste and stir.

Cooked an additional 15-20 minutes or until lentils are cooked through and soft.
Step 9
Add salt and pepper to taste. Liberally mix in EVOO (at least a cup). Be brave with the olive oil. It adds body and flavor. Not adding enough may make the soup taste watery and bland.
