Creamy Chicken Tortilla Soup

This is one of my favorite lazy “dump” meals: dump some cans from the pantry into a pot and bam- soup! If you don’t have one of the ingredients, use what you have. The main ingredients that are super important are garlic, broth, tomatoes, some kind of beans, chicken, and cream cheese.

Instructions

Step 1
Cook & Shred chicken however you like. I usually do frozen chicken in the instant pot because it’s easier.
Step 2
In a pot, add in butter, garlic, and onion. sauté until garlic is golden.
Step 3
Mix in tomato paste until combined.
Step 4
Add in all canned goods (tomato, beans, corn, green chilies). Add Jalapeño as well. Mix in chicken broth.
Step 5
Once this is at a simmer, mix in cream cheese.
Step 6
Now, add your chicken. Once everything is combined, add cheese.
Step 7
Serve & enjoy. Don’t forget to add tortilla chips on top!!
Step 8
*optional: garnish with cheese, sour cream, avocado.
