Vegan omelet
Jian bing

Instructions
Step 1
Soak the mung beans in boiling water until double the size
Step 2
Blend the omelet ingredents together
Step 3
Fry the green veggies if needed (if you use spinach then it's optional)
Step 4
Fry the vegan bacon (with the mushroom sauce)
Step 5
Heat up the pancakes according to the package
Step 6
In a non stick pan, pour in 1 big soup spoon of the omelet batter, sprinkle some black sesame seeds and cook it on low heat until the batter is set
Step 7
When the omelet is cooked on one side, flip it over and pour about 0.5 tb of the batter on top and immediately put the pancake on top. The uncooked batter will bind the omelet and the pancake.
Step 8
Add the rest of the toppings and 1 tsp of the sauce on top of the pancake.
Step 9
Fold two sides of the jian bing and serve it hot.
