Instructions

Step 1
Put all ingredients (expect oil) in blender and blitz until smooth. Leave mixture on the bench for 5-10 minutes to thicken a little
Step 2
Cook hotcakes in batches. Heat a small fry pan on medium heat and add a little butter or coconut oil. Once sizzling, add spoonfuls of mixture and cook for about 2 minutes on each side until set and light golden. If hotcakes begin to cook too quickly on the outside turn the heat down to low. Transfer to a wire cooling rack
Step 3
Serve warm or cold. For toddlers or older children, serve with yoghurt, fresh fruit and a drizzle of maple syrup for a treat.
