1frozen rice bag

1chicken breast
large, cubed

black beans

chickpeas

Salsa Verde

corn
fresh or frozen

plain greek yogurt
optional, topping

cheese
optional, topping
Everything but the Elote seasoning

cumin powder

garlic powder

onion powder

pepper
Instructions
Step 1
1. cube chicken breast (before cooking, if possible)
Step 2
2. season chicken with all seasonings
Step 3
3. when chicken fully cooked, pour in desired amount of salsa and toss to coat chicken
Step 4
4. add frozen rice (and frozen corn, if using)
Step 5
5. once rice and corn cooked, add beans and chickpeas
Step 6
6. season everything again and toss
Step 7
7. add chicken back in, add more salsa, toss more and serve
