Instructions
Step 1
1. Combine the chicken with the marinade ingredients until everything is well coated. Cover the bowl and place in the refrigerator to marinate for at least an hour or up to 24 hours.

2. Preheat the oven to 400°F. Tightly pack the chicken in a loaf pan and roast for 45 minutes, or until the chicken reaches an internal temperature of 165°F.

3. Remove the chicken from the oven and allow it to rest for 10 minutes. If there is a lot of juice from the chicken pooling at the top, you can pour some of it out. Place a cutting board over the loaf pan and flip over. Some juices will still drip.
Step 4
4. Use a sharp knife to thinly slice the chicken from top to bottom. Serve with rice or in a pita with pickles, tomatoes, lettuce and garlic sauce or tahini sauce.
