Easy curry
Easy curry to clean out your fridge. Not authentic! I made my own curry powder using what I had but you could just use curry powder. Serve over rice.

Step 1
Cup veggies. Sauté a few minutes then add spices and sauté another minute, then add lentils and tomato paste and cook another few minutes. Add broth and cover to cook until lentils are soft, approx 15 minutes. Add coconut cream (approx 1/3 cup) or coconut milk. Salt to taste and serve over rice.
