Step 1
In a large bowl, combine the ground pork, soy sauce, vinegar, minced garlic, black pepper, salt, paprika, and cayenne pepper. Mix well until the ingredients are evenly distributed. You can adjust the amount of garlic and black pepper according to your preference.

Prepare the sausage casings by rinsing them in cold water and soaking them in warm water for about 30 minutes. This will soften the casings and make them easier to work with.

Carefully slide the softened casing onto a sausage stuffer or a funnel attached to a piping bag. Leave about 2 inches of casing hanging off the end.

Stuff the casing with the pork mixture, being careful not to overstuff or under-stuff. Twist the sausage into desired links, about 4-6 inches long. You can make them longer or shorter depending on your preference.

Once all the sausages are stuffed and twisted, place them in the refrigerator and allow them to marinate for at least 4 hours, or overnight for better flavor development.

When ready to cook, heat a skillet or frying pan over medium heat and add a little cooking oil. Cook the sausages until they are golden brown and cooked through, turning them occasionally to ensure even cooking.
