Yoghurt pancakes with fruit and a cremesauce

Ingredients
4 servings

1 cupAll-purpose flour

½ cupWhole wheat flour

2 tablespoonsSugar

1 teaspoonMaizena

1 teaspoonBaking soda

1 cupYogurt

½ cupWater

2Eggs

2 tablespoonsButter
melted

Instructions
Step 1

1. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt.

2. In a separate bowl, combine the yogurt, water, eggs, melted butter, and vanilla extract. Whisk until well blended.

3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix, as this may result in tough pancakes.

4. Heat a non-stick skillet or griddle over medium heat. Grease the surface lightly with butter or cooking spray.

5. Using a ladle or measuring cup, pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.

6. Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep warm. Repeat the process with the remaining batter.

7. In a small saucepan, combine the blackberries, cherries, honey or maple syrup, and lemon juice. Heat over medium heat, stirring occasionally, until the fruits soften and release their juices. This should take about 5-7 minutes.

8. In a separate bowl, whisk together the crème fraiche, honey or maple syrup, and vanilla extract to make the sauce.

9. Mix fruit with the yoghurt crème mix

10. Enjoy your delicious and fluffy pancakes with a yogurt and wheat batter, topped with sweet blackberries and cherries and a luscious crème fraiche sauce!

Note: Adjust the sweetness of the toppings according to your taste preference. You can also add a sprinkle of powdered sugar or a drizzle of maple syrup on top for extra sweetness if desired.
