Instructions

Step 1
Heat the oil in the saucepan and toss in the onions and carrots. Fry for around 5 minutes until softening and then add the potatoes and fry for another couple of minutes.
Step 2
Add the lentils and stir into the vegetables and then pour over the stock. Season with pepper and then bring to the boil before turning down the heat and simmering for 35 minutes.
