Instructions

Step 1
Heat some oil in a large saucepan on medium heat and toss in the onion, pepper and garlic. Fry for 4 minutes before reducing the heat and stirring in the spices, seasoning and tomato purée.
Step 2
Add the tomatoes and 420ml of boiling water. Gently bring everything to the boil and then add the lentils and simmer for 15 minutes, stirring occasionally.
Step 3
Add the beans and sweetcorn and bring to the boil once again. Reduce the heat and simmer for another 20 minutes. Allow to cool for 5 minutes before serving.
