20-Minute Chocolate Mexican Chilli

A healthy and easy one-pan recipe to kickstart the new year. Don’t knock the chocolate in this chilli until you try it! It adds the perfect punch of richness and bitterness. 🤌 Serve with corn chips, brown rice, avocado, coconut yoghurt, fresh coriander and/or jalapeños.

Instructions

Step 1
Heat olive oil in a pan on medium to high heat. Saute onion, capsicum and carrot for 3 minutes. Add garlic and saute for a further minute.
Step 2
Add all other ingredients and bring to a boil. Reduce heat to a simmer and cook covered for 15-20 minutes, stirring halfway through.
Step 3
Remove from heat.Serve with choice of sides and enjoy! Store in the fridge for 4-5 days.
