Instructions
Step 1
In a bowl, mix together Gochujang sauce, minced garlic, low-sodium soy sauce, rice vinegar, and sesame oil to create the stir-fry sauce.
Step 2
Heat vegetable oil in a large skillet or wok over medium-high heat.
Step 3
Add the cubed eggplants and stir-fry for about 5-7 minutes until they start to soften.
Step 4
Add the cubed tofu and continue cooking for another 3-4 minutes.
Step 5
Pour the Gochujang sauce over the eggplants and tofu and stir-fry for an additional 2 minutes, until the sauce thickens and coats the ingredients.
Step 6
Garnish with sliced green onions and sesame seeds if desired.
Step 7
Serve the protein-rich spicy Gochujang eggplant stir-fry over cooked brown rice or quinoa.
