Amy's Raw Vegan Cookie Dough Bars
Amy Sherek has these delicious bars she makes! She doesn't know the proportions, but here are the rough ratios and ingredients! I have also modified the recipe for what I normally do and what makes this the easiest! We have a blendtec blender. Note that without a strong blender or food processor, this recipe may be difficult.

Instructions
Step 1
Blend oats, pecans, and then dates. Ratio is 2/3 oats, 1/3 pecans, add dates depending on how sweet you want it. I blend the oats first and then add the pecans. Usually the blender starts struggling. I then take the blended up oat and pecan mixture and dump it into the baking sheet. I take about a third of that mixture and 3 to 5 dates and add them to the blender and blend. I repeat this until all the dates are blended.
Step 2
Melt the coconut oil (not too much, start with 1/8 to a 1/4 cup and go from there). You can blend it, but it might get tough, or you can knead it by hand (what I usually do)
Step 3
Add some water to get more like a cookie dough consistency, but it will be less doughy.
Step 4
Add the salt, cinnamon, vanilla, and as many chocolate chips as you want based on taste preferences!
Step 5
Store in the fridge for longevity
