5portobello mushroom caps
large
1 tablespoonolive oil
1sweet red pepper
medium, cut into strips
1onion
medium, halved and thinly sliced
2garlic cloves
minced
2 teaspoonschili powder
½ teaspoonsalt
1 teaspoonground cumin
½ teaspooncrushed red pepper flakes
1 teaspoongrated lime zest
1lime juiced
⅓ cupcilantro
garnish
8flour tortillas
6 inches, warmed
Instructions
Step 1
Remove stems from mushrooms; if desired, remove gills using a spoon. Cut mushrooms into 1/2-in. slices.
Step 2
In a large skillet, heat oil over medium-high heat; saute mushrooms, red pepper and onion until mushrooms are tender, 5-7 minutes.
Step 3
Stir in garlic, seasonings, lime zest and juice; cook and stir 1 minute.
Step 4
Serve in tortillas; top with cheese.
