Verde Jackfruit Tacos

Using my homemade Salsa Verde, these tacos make a wonderful addition to our taco Tuesday line up. Super quick and easy to make. To keep this low sodium, I use Edward & Sons Organic Young Jackfruit Unseasoned.

Step 1
Saute onion and garlic in a pan with olive oil or water. Once onions are translucent add in the jackfruit and 1 cup of vegetable broth. Bring to a boil and let simmer at medium for 20 mins. Once jackfruit has soften and breakup add the taco seasoning blend. Stir together, then add the salsa verde with remaining vegetable broth or water. Let simmer on low heat for 15 to 20 minutes.
Step 2
Serve with the fixings of your choice.
