Instructions

Step 1
Cook your American sweet potatoes in the oven or microwave until cooked (about 50 mins in the oven at 200c or 10 mins in the microwave on high)

Once cooked, we’re adding them to a bowl with some crushed chickpeas, brown rice, fresh coriander, chopped chilli, red onion, garlic, cumin, smoked paprika and dried coriander

Mix it all together and form into patties

Bake in the oven for about 30 minutes at 200c or until browned

For our sauce, mix vegan yoghurt, mayo, harissa, fresh coriander, lime and a splash of oil

Toast your burger buns and add your patties
Step 7
Layer on the sauce, some sliced Avo, pickled red onions and lettuce and tuck in. This makes about 4-6 burgers depending on the size of the potatoes and how big you make the patties!
