Instructions
Eggplant
Step 1
Slice the eggplant lengthwise.
Step 2
Heat the oil in the pan. Leave the heat on medium high. Add the eggplant slices and season with half the seasoning. Fry for about 3min. Then flip.
Step 3
Again season with salt, pepper and oregano. Fry for another 3min until golden.
Grilled tomatoes

Cut the tomatoes in half.
Step 5
Heat the oil in the same pan you fried the eggplant. Reduce the heat to medium high. Add the tomatoes and fry for about 2-3min.
Chicken
Step 6
Heat the oil in the pan. Leave the heat on medium high. Add the chicken and half the seasoning. Fry for about 3min. Then flip.
Step 7
Again season with salt, pepper and oregano. Fry for another 3min.
Sandwich
Step 8
Cut the baguette in half. Spread both sides whith olive oil and toast until golden brown.
Step 9
Slice the mozzarella.
Step 10
Top the bottom half with the mozzarella slices and bake in the oven at 180 degree grill station until the cheese has melted.
Step 11
The top it with the arugula, eggplant, chicken and tomatoes.
Step 12
Drizzle on the balsamic cream.
Step 13
Spread the upper baguette half with the basil mayonnaise and stack it on to the other half. Enjoy!
