Salmon Bites

These salmon bites are so easy and simple to put together. They make for a perfect lunch or a fun snack! I found this new lunch box which made for the perfect vessel to hold these salmon bites for on the go. For this recipe I used my favorite 90 second sticky rice I find at Costco, but I've added the ingredients to make your own rice if you can.

Ingredients
2 servings

1 lbsalmon
skin removed, cut into cubes

1 Tbspsoy sauce

1 Tbsptoasted sesame oil

½ tspgarlic powder

½ tspsmoked paprika

5nori sheets
cut into 4 equal squares

1 Tbspfurikake

scallions
chopped, for garnish
For the rice
For the spicy mayo
Instructions
Step 1
Toss salmon pieces in a bowl with soy sauce, toasted sesame oil, garlic powder and paprika. Let marinate for at least 30 minutes.





Step 2
Place rice in a fine-mesh strainer and rinse well with cold water until it runs clear. Drain and transfer to a saucepan.

Step 3
3. Add water to the rice and briefly stir. If you have time, you can leave the rice to soak for 20-30 minutes (this step is optional, but it helps the rice to cook more evenly).

6. Bring the saucepan with rice to a simmer and cook covered for 15 minutes. Turn off the heat, add rice vinegar, gently stir, cover and let stand for another 10 minutes.

Step 5
In a cup, combine mayo, sriracha, soy sauce and garlic powder.




Step 6
To build your bites, place 1 tbsp of your cooked rice on 1 piece of nori. Add 3-4 pieces of salmon. Top with spicy mayo, furikake and green onions. Repeat for additional nori pieces. Enjoy!
