Mushroom sauce and fusilli pasta
Instructions
Dairy-Free Heavy Cream
Step 1
Add cashews to a pot of boiling water for 15 minutes.


Step 2
Add cashews to a blender and add fresh water. Blend into a thick cream.


Mushroom Sauce & Pasta
Step 3
Make pasta in boiling water per package instructions. Tip: Add a pinch of salt and a splash of olive oil to boiling water before adding pasta.
Step 4
Finely chop 1-2 cloves of garlic and 1/2 a sweet onion into slices. Heat oil in a pan on medium and saute garlic and onions until onions are translucent and soft.




Step 5
Add in sliced mushrooms and saute until reduced. Add a pinch of salt.


Step 6
Turn heat to medium-low and add in 1/2 cup of the heavy cream (or more). Store leftover cream in an airtight container.

Step 7
Add in a splash of plant-based milk to thin out the cream.

Step 8
Add salt, black pepper, and spices to taste!
