Green Goddess Pasta

Instructions

Step 1
1. Cook pasta (al dente) and reserve 1 C of the water. Set cooked pasta and reserved water aside.
Step 2
2. Heat a little oil in a pan over medium heat and sauté edamame for a few minutes. Then add in zucchini, garlic, and onion and sauté until veggies are tender. Add in spinach and continue to sauté for 2 more minutes. Take veggies off the heat and set aside to cool for 5 minutes.
Step 3
3. Add all the cooked veggies, salt, lemon juice, oil, parmesan and peppers to a food processor or blender and puree until a thick sauce forms. Add a little of the reserved pasta water at a time while continuing to blend until the sauce is a desired consistency. I used about 3/4 c of the water.
Step 4
4. Heat the pot that you cooked the pasta in over low heat, pour the green sauce in and add the pasta in. Stir. Serve once it’s heated to your liking!
