Instructions

Step 1
Preheat oven to 425
Step 2
Cut chicken into 1" cubes and cook over medium-high heat until well browned and cooked through.
Step 3
Stir in soup and .5 c salsa. Cook until mixture is hot and bubbling
Step 4
Spread about 1/3 c chicken mixture onto half of each tortilla to within .5" of the edge.
Step 5
Brush edges tortillas with water fold the tortilla over the filling and press to seal.
Step 6
Place tortillas onto a baking sheet and bake for 5 min in a preheated oven.
Step 7
Heat the broth, water, and remaining salsa in a 1-quart saucepan over medium-high heat, until boiling.
Step 8
Stir in rice. Cover and let stand for 5 min. Serve with quesadillas.
