Tofu scramble
Tofu scramble is a good alternative to eggs. For a wet texture scrambled egg use soft, for more true egg texture use medium. Firm/extra firm also works but will have a more firm texture. The black salt is totally optional. I had to get mine at an Indian grocery. It has a bit of a sulfur taste and will make the tofu taste more egg-like

Step 1
Mix seasonings together and add a splash of water to form a loose paste. This will help them incorporate into the tofu better. In a nonstick pan over medium-high heat, with a bit of oil add drained tofu and cut into large cubes for soft tofu or smaller cubes for medium tofu. Sauté until you start to get some crispy/browned edges. Add seasoning mix and stir while cooking a few more minutes until everything is coated and warm. Serve as is or on a breakfast sandwich.
