Makes 7 - 1 cup servings. To make it thicker, like a stew use less water or drain liquid and set aside for another soup stock. For a richer flavor, you can add 3-4 tablespoons of olive oil to the pot after cooking. Just don't cook the oil.

1yellow onion
medium, or white, chopped

2carrots
peeled and chopped

2 stalkscelery
chopped small

4garlic cloves
pressed or minced

2 teaspoonground cumin

1 teaspooncoriander powder

½ teaspoondried thyme

1 teaspoonfennel seed

1 x 14 ouncescan diced tomatoes
lightly drained

1 cupbrown lentils
or green, picked over and rinsed

2 cupsvegetable broth
no salt, less is needed if presoaking the lentils

1 cupkale
chopped

½ teaspoonsalt

red pepper flakes

pepper
fresh ground, to taste

½ cupmushrooms
chopped
Instructions
Step 1
if you have time, soak lentils for 4-6 hours (it cuts down on cooking time)
Step 2
Chop veggies in food processor. Put everything into instapot (except Kale) and cook for 10 min. Or 30 min if you have not presoaked lentils
Step 3
Chop Kale very finely = food processor works great
Step 4
after the soup has cooked. Carefully transfer 2 cups into a blender and blend till smooth. Pour it back into the pot. Now add the chopped kale and the heat of the soup slightly cooks the kale.
Step 5
Serve warm. Add greated cheese on top or.... Raku loves to take a thick slice of bread. Melt cheese on top. Then, adds the thick stew like soup on top.
