Step 1

Add 2/3 of the spinach, mascarpone and most of the blue cheese to the blender and blitz until smooth. Loosen with a splash of boiling water.
Step 2

Toast the pine nuts until golden and then set aside.
Step 3

Melt a knob of butter in a pan and a splash of olive oil. Add the gnocchi and fry on a medium heat for 5 minutes. Turning from time to time.
Step 4

Mix the gnocchi with the green sauce and serve into bowls. Sprinkle the remaining blue cheese and pine nuts with black pepper.
Step 5
Optional - grill for 2 minutes.
