Instructions
Step 1
Salt and pepper whole chicken
Step 2
In InstaPot, add 1 tbls oil & brown each side of chicken (about 7 mins each side).
Step 3
While browning chicken, cut up potatoes onion, carrots, celery, and remove Kale from (and shread into lrg bite-sized pieces).
Step 4
After chicken has browned, remove chicken and oil from pot.
Step 5
Add potatoes, onion, carrots, celery, and Kale.
Step 6
Place chicken on top of veggies, and poor in broth.
Step 7
Attach InstaPot lid and set pot to "Soup" setting.
Step 8
After done cooking, pull out chicken and shred meat.
Step 9
Transfer soup and shredded chicken to large container. Add additional broth as needed
Step 10
Serve
