Hearty Spicy Cabbage Soup

Satisfying and mildly spicy low carb soup. Easy and fast. A serving is 2 cups. You can reduce the sodium by choosing a reduced sodium bouillon paste, like Reduced Sodium Better Than Bouillon Roasted Chicken flavor. If you don’t have gochujang, substitute your favorite hot sauce.

24 oz93% lean ground turkey

500ggreen cabbage
chopped

300gcarrots
chopped

90gyellow onion
diced

2 Tbspolive oil

3 Tbspnutritional yeast

1 Tbspgochujang

2 Tbspchicken bouillon paste

3.5 ozroasted chestnuts
chopped

14.5 ozcanned diced tomatoes

2cloves garlic
smashed

1 tspblack pepper

2bay leaves

3 Tbspdried parsley

⅛ tspground nutmeg

⅛ tspturmeric

⅛ tspcardamom

⅛ tspcinnamon

1 tspsmoked paprika

6 cupswater
Instructions
Step 1
Add half (1 tbsp) of olive oil to a large pot. Add ground turkey and brown, breaking up the turkey into small pieces. When done, transfer to a bowl.






Step 2
Add the remaining (1 tbsp) olive oil to the pot. Add carrots, garlic, onion, and powdered spices and gently brown. NOTE: If you are looking to save time, do this in a skillet as you brown the turkey, then add the cooked veggies to turkey in the pot (and skip transferring the turkey to a bowl).






Step 3
Transfer cooked turkey back to pot. Add remaining ingredients (tomatoes (including juice), cabbage, chestnuts, yeast, bouillon paste, gochujang, parsley and bay leaves). Add water if cabbage is not covered. Stir well. Cover and simmer until vegetables are tender, about 30 minutes. Taste and adjust seasonings - add gochujang if you want more heat!
