Instructions
Step 1
Rinse and presoak lentils. I soaked them for few hours

Step 2
Cut carrot, cauliflower and butternut squash into small chunks





Step 3
In a pot, heat olive oil on a medium heat


Step 4
Add vegetables and saute for few minutes. Add diced chicken breast and cook for few minutes.

Step 5
Add lentils, tomato juice and enough water to cover the lentils. Season with salt and pepper and add bay leaves. Cook for hour, hour on a half on medium low.
