Prawn/Shrimp Pasta with Mascarpone, Garlic Chilli and Basil

Instructions

Step 1
Finely chop the Chilli, Onion and Basil then finely slice the garlic. Slice the tomatoes in half and set them all aside.
Step 2
Heat a pan with water, and once boiling add in salt and the spaghetti.
Step 3
Add the Olive Oil to a large cold sauté pan and set on low heat.
Step 4
Add in the garlic slices and allow to flavour the oil for 3-5 minutes.
Step 5
Once you can smell the pasta add in the finely chopped chilli and stir, and cook for a further two minutes.
Step 6
Add in the cooked prawns, stir and allow the prawns to soak up the garlic and chilli flavours for approximately two minutes, do not overcook or the garlic burn. If using fresh prawns cook until the prawns turn pink. Remove the prawns from the pan and set aside.
Step 7
To the same pan add the onions and the tomatoes crank up the heat a little and cook until the tomatoes soften.
Step 8
Now add in the mascarpone and stir in, add two ladles of pasta water and stir in. Next, add in the pasta and stir until all the pasta is coated.
Step 9
Add in the chopped Basil and stir. Add in three tbsp of the grated parmigiana cheese and turn off the heat.
Step 10
Add in the prawns and stir well. After two minutes you are ready to plate.
Step 11
Once plated top with more chopped Basil, parmigiana and black Pepper.
Step 12
Lick your lips and enjoy.
