Instructions
Step 1
In a medium sized mixing bowl, add the peanut butter, pumpkin purée, maple syrup, and cinnamon. Stir until combined. Then add in the puffed millet and mix again until evenly coated
Step 2
In a lined 9x9 pan, take the puffed millet mixture and pour it in. Use a spatula to flatten it out, so that it’s evenly spread across the base
Step 3
Put the pan in the freezer for 30 min to set
Step 4
In a small bowl, melt coconut oil and dark chocolate. I microwave it for 30 seconds, stir, 20 seconds, stir, and then 10 second intervals until smooth.
Step 5
Pour the melted chocolate over the bars so that it covers the top. You can use a spoon or spatula to spread it.
Step 6
Freeze for another 30 min to set, or up to 2 hours. If you’re prepping for a few days, then put it in the fridge
