1 tspgaram masala

1 tspground coriander

1 ½ Tbspcurry powder

4garlic cloves
crushed

1 tspginger
grated

chopped tomatoes

4chicken breasts
all fat removed

tomato purée

1 tsptumeric

1 tspground cumin

100mlwater

chicken stock cube

1juice of lime

coriander

chilli powder

ground cinnamon

2onions
roughly chopped

1red pepper
roughly chopped

frozen spinach
Instructions
Step 1
Cut chicken into bite size pieces
Step 2
Add juice of 1 lime, black pepper and the curry powder to chicken, mix and leave to marinate for at least 30 mins
Step 3
Fry onion, red pepper, garlic and ginger until onion turns light brown
Step 4
Add chicken and cook for 2 mins until sealed
Step 5
Add rest of the spices and cook on low heat for 2 mins
Step 6
Add tinned tomatoes, spinach, water and stock cube then simmer for 20+ mins
Step 7
Serve with rice and fresh coriander
