yellow onion

Instructions
Boil the potatoes in instant pot
Step 1
Pour 2 cups of water into the instant pot
Step 2
Place trivet and put the potatoes on it

Pressure cook on high for 10 mintues

Let the pressure release naturally

Let cool, peel, then coarsely break up
Filling

Toast fenugreek seeds dry

Add ghee and bring up

Add ginger and garlic and cook until not raw

Add diced onion and cook until not raw

Add cayenne, salt, turmeric

Add frozen peas and carrots and cook until water is evaporated

Add potatoes

Add garam masala and chaat masala

Stir to incorporate flavors (add some water if needed)

Squeeze lemon juice

Add 2 bushels of cilantro and 3 serrano chilis to blender
