Step 1
Heat 1 tbsp avocado oil in a pan. Add cauliflower rice and sear for 2-3 minutes, then mix and continue to seat for another 2-3 minutes. Remove from pan.
Step 2
Heat another tablespoon of avocado oil in the same pan and add red pepper, onion, and jalapeño, and cook for 3-4 minutes until it softens.
Step 3
Add garlic and cook for 1 minute, stirring frequently. After garlic becomes fragrant, add cumin.
Step 4
Add in chicken stock and tomato paste, and allow to simmer, regularly stirring until the sauce thickens.
Step 5
Season with salt to taste. Return your cauliflower rice to the pan, and combine. Cook for 2-3 minutes, then add lime juice.
Step 6
Serve and garnish with chopped cilantro and green chilies.
