Ingredients

2 tablespoonsextra-virgin olive oil

beef stew meat
cut into 3/4 inch pieces

carrots
For medium, peeled and diagonally, sliced 1 inch thick

8baby red potatoes
quarter

1yellow onion
medium, cut into thin wedges

2 clovesgarlic
minced

½ teaspoonsalt

½ teaspoonblack pepper

1Bayleaf

2 cupsbeef broth
or bone broth

2 tablespoonscoconut amino

2 tablespoonstapioca
flour, optional for thicker still
Instructions
Step 1
In a large skillet, heat the olive oil over medium heat at the beef and cook in batches, if necessary, stirring occasionally until browned on all sides
Transfer the beef into a 4 quart slow cooker add the carrots, potatoes, onions, garlic salt, pepper, Bayleaf broth, vegetable juice, and coconut. Amino‘s. Stir to combine cover and cook on low for 6 to 8 hours or on high for 3 to 4 or until the beef and vegetables are tender , if using tapioca flour, turn the slow cooker to high if using the low setting in a small bowl, stir together the tapioca flour, add 2 tablespoons of water sir into the stew cover and cook for 10 minutes remove and discard the Bayleaf before serving
