Taco Tuesday Tray Bake

Affectionately known in my house as "Taco Tuesday", this is an easy mid week meal for all the family.

Instructions

Step 1
Mix the fajita seasoning spices together in a ramekin or small pot. This will make more than you need, save the rest for next time. Chop the peppers into strips, red onions into small wedges and the sweet potato into small cubes. Place in a large oven proof tray and mix with a teaspoon of oil or a few sprays of oil to cover. Sprinkle over a tablespoon of the fajita seasoning and place the chicken thighs on top, dust the thighs with the remaining tablespoon of fajita seasoning . Place in the oven for 30 minutes at 200 degrees or 180 fan, then flip the chicken and place back in for 20 minutes. Making the salsa is a great way of killing time while everything cooks. Finely chop the tomatoes, red onions, fresh red chili (to taste) and roughly chop the coriander, mix together in a bowl with lime juice, season to taste. Check the chicken and vegetables are cooked, there should still be a little moisture in the bottom. Remove the cooked chicken, slice it into bite sized chunks and place back in the tray, mix everything together, adding a good handful of chopped fresh coriander. Serve with warmed mini tortillas and the fresh salsa. Vegetarian Tip: Use Halloumi cut into squares instead of chicken, it’s delicious!
