Instructions

Step 1
Place the thighs in a bowl add in the garlic and ginger paste along with the rest of the dry ingredients, and rub into the thighs.
Step 2
Once the thighs are coated in the spices pour in the milk mix again and set aside to marinate while preparing the Slaw.
Step 3
Grate the slaw ingredients into a separate bowl.
Step 4
Finley chop the coriander and add to the bowl.
Step 5
Gradually add the sugar, olive oil and vinegar into the bowl and mix tasting as you stir, add more sugar Vinegar and Olive oil as required. Cover and place in a refrigerator.
Step 6
In another bowl add in the crispy coating ingredients and mix.
Step 7
Heat the oil for deep frying to around 160 degrees.
Step 8
Take a chicken thigh out of the marinade and add it to the flour mixture and thoroughly coat in the flour, shake off the excess and place on a plate, repeat with the rest of the thighs.
Step 9
Repeat the process, dip a coating thigh into the marinade and then back into the flour, shake off the excess and add to the plate.
Step 10
Once the oil has reached the desired temperature gently place the thighs into the hot oil one by one and fry for about 5- 6 minutes until a golden brown. Remove the chicken place it onto a rack and allow it to drain. Always cut into a large part of the chicken to ensure it is cooked all the way through.
Step 11
Time to plate. Cut your bread bun in half and add some mayonnaise to the top base.
Step 12
Add some shredded slaw on the base next add a piece of chicken and a touch more slaw on top of the chicken and close the bun, serve with fries and a side of slaw, lick you’re lips and enjoy.
