Fresh zaatar dip

This a quick & simple way to make zaatar dip.
Use it in sandwiches, salads & baked goods. I usually make a small quantity as needed. This will last you a week in the fridge.
The proper Palestinian zaatar method lasts longer for sure, shelf life wise, but flavor will lessen in power with time. This is why I usually like to make this dip it gives me the intensity of a zaatar when thyme and oregano are in season.
This is super yummy in a purple labna sandwich, find the recipe in the breakfast category.

Instructions
Step 1
Wash & spin dry your greens well. After spinning your greens, tap dry them with a tea towel.
Step 2
In blender, pulse the greens with a tablespoon of olive oil. Remember to pulse or blend on low not to alter the flavor of the oil or the greens.
Step 3
Drizzle the rest of olive oil while blending until the desired consistency is reached.
Step 4
Pour into a bowl, mix in sumac, salt & sesame seeds
Step 5
Jar & enjoy. Best enjoyed with loved ones.
