Instructions
Step 1
Bring broth to a boil, then add chopped mushrooms.
Step 2
Add soy sauce and seasonings, stir and simmer.
Step 3
Mix in Cornstarch Slurry (2 tbsp cornstarch + 4 tbsp water) and boil until soup thickens and becomes glossy.
Step 4
Scramble eggs with a bit of water to thin out and slowly stream into boiling water while stirring broth with other hand creating ribbons of cooked egg.
Step 5
Add sesame oil and vinegar 1 tbsp at a time. Taste for seasoning. Finish with green onions.
