1 x 400mlcan coconut milk
full-fat or light

2limes
zest and juice

2 tablespoonssoy sauce

1 tablespoonsesame oil

1 tablespoonmaple syrup
or honey

1 tablespoonfresh ginger
grated

2cloves garlic
minced

Red chili flakes
to taste, optional

fresh cilantro
optional

Instructions
Step 1
Cook the rice noodles according to the package instructions. Drain and set aside.In a large pan or wok, combine coconut milk, lime zest, lime juice, soy sauce, sesame oil, maple syrup or honey, grated ginger, and minced garlic. Heat over medium heat.Once the sauce is heated through, add the cooked noodles to the pan and toss until well coated.If desired, add red chili flakes for some heat.Serve the noodles hot, garnished with fresh cilantro and chopped peanuts.
