2 teaspoonsextra virgin olive oil

1 teaspooncajun seasoning

Instructions
Chicken
Step 1
Dice chicken and add to a medium bowl. Toss with olive oil, Cajun seasoning, salt and pepper.
Step 2
Meanwhile, pre-heat a large pot to medium-high heat. Once to temperature, add chicken.
Step 3
Cook chicken until browned, stirring to ensure all sides are cooked evenly. Transfer to a clean bowl and cover to keep warm.
Pasta
Step 4
Heat remaining olive oil in the same pot over medium-high heat. Add bell peppers and onion and saute until softened. Add garlic, parsley, and remaining cajun seasoning and saute 1 minute longer, allowing the seasoning to fully coat the vegetables.
Step 5
Pour in chicken broth, diced tomatoes, and milk. Bring mixture to a boil, then add pasta.
Step 6
Cook, stirring frequently, about 12 - 13 minutes. Once pasta is tender, add cornstarch and water mixture and stir until thickened.
Step 7
Remove from heat. Mix in parmesan and cooked chicken. Top with shredded cheese and serve.
