Ingredients

30 ouncesboneless skinless chicken thighs
cut into bite-sized pieces
2 tablespoonolive oil
1onion
chopped
3cloves garlic
minced
2 tablespoongrated ginger
2 teaspoongaram masala
1 teaspoonturmeric powder
½ teaspoonground cumin
½ teaspoonchili powder
24 ouncediced tomatoes
can, undrained
1 cupdairy-free heavy cream
Naan bread
gluten-free for serving
Instructions
Step 1
Heat the olive oil in a large skillet over medium heat.
Step 2
Add the onion and cook until softened, about 5 minutes.
Step 3
Add the garlic, ginger, garam masala, turmeric, cumin, and chili powder and cook for 1 minute more.
Step 4
Add the chicken and cook until browned on all sides, about 5 minutes.
Step 5
Stir in the diced tomatoes and bring to a simmer.
Step 6
Reduce heat to low and simmer for 10 minutes, or until the chicken is cooked through.
Step 7
Stir in the heavy cream and cilantro.
Step 8
Serve immediately with naan bread.
